Frozen Banana Bites

When you live in a city (with one measly window AC) it's hard to eat anything but frozen food in the summer. My freezer is stocked with frozen fruit as I'm always prepared to whip up a smoothie for breakfast, lunch, or dinner, when I don't feel like turning on the stove (or moving at all for that matter). 

One fruit I always have on hand? Frozen bananas. They are delicious to eat just by themselves as they have a creamy texture that resembles ice cream or frozen yogurt, or you can throw them in a smoothie. A few weeks ago I decided to take my frozen banana obsession to the next level by making these peanut-butter, chocolate covered frozen banana bites. Just a few is enough to satisfy your sweet tooth without going overboard. Check it out:

Frozen Banana Bites

  • 2 Bananas, sliced into 1/2 inch rounds
  • 1/4 cup dark chocolate
  • 1/4 cup peanut butter

On a parchment-paper lined baking sheet or plate, lay out bananas evenly. Place in freezer, and for best results, freeze overnight. 

The next day: Place peanut butter in a small Ziploc plastic bag. Make sure the peanut butter is all placed in one of the bottom corners. Then, slice a small slit into the corner, making sure the cut off plastic is completely removed.

Squeeze the peanut butter out of the bag, placing a dollop on each banana round. Then, place dark chocolate in a microwave safe bowl. Microwave in 10 second intervals, stirring in between, until chocolate is completely melted. Spoon the chocolate over each banana and place back in freezer for 10 minutes, or until chocolate is completely hardened. Enjoy frozen!
