Rainbow Crunch Salad with Creamy Cashew Sauce
In the hot summer months it might be difficult to keep up with the water consumption you need. That's why I always recommend eating your water! This salad is loaded with hydrating veggies and topped with a healthy-fat and protein filled dressing. Not to mention it's bursting with flavor, and a much healthier and lighter option to lug to a picnic or barbecue. Check out the recipe below.
Rainbow Crunch Salad
1 head broccoli, chopped
3 carrots, shredded
1 yellow bell pepper, diced
1 cup radishes, diced
1 cup grape tomatoes, halved
1/4 cup cilantro, chopped
Mix all ingredients in a large bowl. Top with cashew dressing (below), toss, and enjoy!
Cashew Sauce
1 cup cashews
1 tbsp honey
1⁄4 cup soy sauce
1⁄2 tsp red pepper flakes or chili powder
1 T grated ginger
1 clove minced garlic
water
Place all ingredients in blender. Top with water until all ingredients are covered.
