Red Curry Sauce (Only 4 Ingredients!)
If you're feeling like your dinners are stuck in a rut, this sauce is the perfect solution. It's easy to make, only contains four ingredients, and it's packed with flavor. Perfect for pouring over chicken, tofu, and any vegetables you like.
Red Curry Sauce
- 1 sweet potato, cleaned and diced
- 2 cups vegetable broth (more depending on how thin or thick you want the sauce)
- 1 cup coconut milk
- 4 ounce jar red curry paste (you can find this in the 'international aisle' of most grocery stores).
Place sweet potato and vegetable broth in a medium pot. Bring to a boil and cover, keeping lid slightly ajar. Cook 20 minutes, or until sweet potatoes are completely cooked through and tender.
Add coconut milk and red curry paste and blend until smooth with an immersion blender. Don't have an immersion blender? Get one! But seriously, if you don't have one, you can put all of this in a regular blender or food processor and blend until smooth.
If you want to make a complete dish, cook up some protein (chicken, steak, tofu, tempeh) in a medium skillet with 1 - 2 tsp of coconut oil. When it's about 50% cooked, add the curry sauce, and vegetables of your choice. Cook until protein and vegetables are cooked through. Salt to taste and enjoy!
